\nHace ya un a\u00f1o que abriera sus puertas el restaurante Salino<\/a>. Salino es el tercer proyecto hostelero de los hermanos Aparicio<\/b> tras sus exitosos Cachivache Taberna<\/a> y La Raquetista<\/a>. Salino<\/b>, que se ubica en la calle Menorca a escasos metros del parque del Retiro en el local que anta\u00f1o fuera La Emualda<\/b>, sigue pr\u00e1cticamente la estela de sus hermanos mayores. <\/span><\/div>\n

<\/span><\/div>\n
\nDesaparecida La Emualda<\/b>, Javier y Paco Aparicio<\/b> reforman el local contando para ello con el estudio Ping Pong Arquitectura<\/b> del interiorista Pello Basuto Cadi\u00f1anos<\/b> creando una atm\u00f3sfera c\u00e1lida y acogedora.<\/span><\/div>\n

\nLa propuesta es similar, como decimos, a la de Cachivache <\/b>o La Raquetista<\/b>; quiz\u00e1, como novedad, este Salino <\/b>est\u00e9 m\u00e1s orientado al producto mar\u00edtimo<\/b> (de ah\u00ed el nombre del restaurante). <\/span><\/div>\n

\nSalino <\/b>dispone de una primer<\/span> zona de barra y mesas altas<\/b> con una carta espec\u00edfica para esa zona estructurada en <\/span>raciones <\/b>(y medias raciones) \u00e1giles y resolutivas. <\/span>Los <\/span>torreznos
\n<\/i><\/b>que hicieron famosa a La Raquetista<\/b><\/span><\/span>, <\/span>las bravas <\/i>de Cachivache
\n<\/b>que son un referente, las ostras <\/i><\/b><\/span>con Bloody Mary<\/i> o las
\ncroquetas de txangur<\/i>ro <\/b><\/span><\/span>son algunas de las propuestas que ya anuncian que Salino
\n<\/b>se sit\u00faa a medio camino entre el casticismo y el refinamiento del mar. <\/span><\/div>\n

\nEn el comedor propiamente dicho, la carta se distribuye en seis apartados, <\/span>tapeo madrile\u00f1o, verduras y ensaladas, mar y mar y
\nmonta\u00f1a, arroces y pastas, pescados <\/span><\/b>y finalmente, carnes<\/b><\/span><\/span>. <\/span><\/span><\/div>\n

\nEntre los platos que probamos en nuestra reciente visita destacar una magn\u00edfica pipirrana de at\u00fan rojo<\/i><\/b> que se sirve sobre una hoja de cogollo y salmorejo y que puede tomarse con la mano como si de un saam <\/i>se tratara. Imperdonable no probar su taco de gallinejas<\/i><\/b> en las que el popular producto de la casquer\u00eda madrile\u00f1a se reinterpreta a la manera mexicana convirti\u00e9ndolo en un delicioso bocado que desde luego hay que probar s\u00ed o s\u00ed.<\/span><\/span><\/div>\n

\nMuy rica igualmente la <\/span>corvina \u00aben amarillo\u00bb<\/i><\/b> con una sabroso salsa de azafr\u00e1n y las <\/span>alb\u00f3ndigas de cordero estilo Marrakech <\/i><\/b>que demuestran el sutil manejo de las especias por parte de<\/span> Javier Aparicio<\/b>. Interesante variedad de arrces que quedan pendientes para futuras visitas.<\/span><\/div>\n

\n En los postres (hay que recordar que Javier fue en su tiempo jefe de pasteler\u00eda en el desaparecido<\/span> La Broche<\/b>) destaca una original<\/span> torrija de berenjena <\/i>en la que el tradicional pan se sustituye por berenjena<\/span>.<\/span><\/div>\n

\nLa carta de vinos<\/b><\/span> ha sido dise\u00f1ada por Paco Aparicio, <\/b>hermano del chef y sumiller, que ha seleccionado una
\nlista de m\u00e1s de 70 referencias <\/b>de m\u00e1s de 20 denominaciones de origen
\ndisponibles muchos por copa y en botella. <\/span><\/span>La carta ofrece vinos representativos de
\ntodas las zonas vitivin\u00edcolas de Espa\u00f1a con un <\/span>abanico muy amplio de variedades, elaboraciones y estilos. <\/span><\/span><\/span><\/div>\n

\nNo hay ninguna de que Salino, como sus predecesores, ser\u00e1 un \u00e9xito. La receta no es otra que buen producto, cocina de esa que siempre gusta y precios comedidos. Enhorabuena.<\/b><\/span><\/span><\/div>\n
