El reconocimiento remarca la posici\u00f3n de <b>Monte Nevado <\/b>como empresa jamonera de referencia en nuestro pa\u00eds, que vela por un proceso de elaboraci\u00f3n natural, a trav\u00e9s de un exquisito cuidado individual de cada pieza. Durante la <\/span><b style=\"font-family: arial\">curaci\u00f3n en las bodegas de Monte Nevado<\/b><span style=\"font-family: arial\">, situadas en un entorno natural y con ventanas que aprovechan el aire puro para un secado lento y natural, los maestros jamoneros de la casa segoviana han revisado y clasificado individualmente cada pieza, hasta que cada una ha alcanzado su maduraci\u00f3n perfecta.&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\"><span style=\"font-family: arial\"><br \/><\/span><\/p>\n<p style=\"text-align: justify\"><span style=\"font-family: arial\">Los cerdos entraron en ella con una media de 18 meses, frente a los 12 m\u00ednimos que exige la normativa. Cada uno de ellos dispuso de una media de 4,1 hect\u00e1reas para sestear y corretear libremente en una montanera con abundancia de bellota, hierba suficiente y climatolog\u00eda muy benigna (altas temperaturas), al inicio de campa\u00f1a, con menos fruto al final.
