Concebida por su creador, Jos\u00e9 Luis Mart\u00ednez,<\/b> como esa taberna que siempre hab\u00eda so\u00f1ado tener, Taberna y Media<\/b>, como su propio nombre se\u00f1ala, supera las fronteras de la taberna cl\u00e1sica al uso para adentrarse en el concepto de un restaurante y de un restaurante, cr\u00e9anme, en el que se come francamente bien.<\/span><\/div>\n

\nEn su carta recetas de toda la vida pero reinterpretadas por Mart\u00ednez y su equipo <\/b>sin perder en ning\u00fan momento la coherencia y dando a la materia prima su importancia para que siempre sobresalga por encima de t\u00e9cnicas y artificios. Sencillez y honestidad<\/b> al fin y al cabo, algo que durante a\u00f1os se ha echado de menos en gastronom\u00eda y que por fin parece volver a ocupar ese lugar del que nunca debi\u00f3 moverse.<\/span><\/div>\n

\nM\u00edticos se han hecho en estos a\u00f1os sus torreznos<\/b>, entre los mejores de la capital, sus patatas bravas<\/b> o su espuma de setas con alioli.<\/b> Pero cada a\u00f1o la carta de Taberna y Media<\/b> incorpora un buen n\u00famero de nuevas creaciones para mantener vivo el inter\u00e9s entre su nutrida clientela.<\/span><\/div>\n

\nAs\u00ed este a\u00f1o han entrado en su carta platos como el<\/span> tartar de salm\u00f3n con parmentier de boniato, la tortilla con callos que se acompa\u00f1a de hongos portobello, la  dorada al vapor con cremoso de trigo tierno y vegetales, el lomo de merluza con fideua de mejillones y pulpo y la carrillera de ternera con una sabros\u00edsima carbonara de verduras<\/b>.<\/span><\/div>\n

\nPlatos todos ellos de impecable factura que mantienen el nivel de esa casa de comidas reinventada que es en realidad Taberna y Media.<\/b><\/span><\/div>\n

\nDe martes a viernes, durante los meses de fr\u00edo, su cocido madrile\u00f1o<\/b> servido en dos vuelcos resulta delicioso. Servicio amble, cercano y pendiente de todo detalle con Eichel <\/b>al frente, un magn\u00edfico profesional que lleva ya tiempo trabajando con Jos\u00e9 Luis Mart\u00ednez. <\/b>Si conocen Taberna y Media sabr\u00e1n de lo que hablamos.
