Su manejo se orienta a favorecer y proteger los aromas propios de la variedad, optimizando al m\u00e1ximo su potencial. Durante la fase de maduraci\u00f3n lo que se busca es aumentar de forma natural su concentraci\u00f3n de az\u00facar, por lo que se vendimia un mes m\u00e1s tarde de lo que ser\u00eda una fecha normal, aumentando de forma importante la concentraci\u00f3n de az\u00facar en la baya, tanto por madurez como por una deshidrataci\u00f3n natural.<\/span><\/div>\n

\nLa vainilla aportada por las barricas nuevas, as\u00ed como las notas de avellanas, nueces e higos secos completan una nariz interesante y compleja.<\/span>
